PUMPKIN CHUTNEY

250 grams Bottlegourd
1 cup Vinegar
1 1/2 cups Water
1/2 teaspoon Red chili pepper
2 big Cardamoms
1 1/2 cups Sugar
2 teaspoons long strips of Ginger
2 cloves Garlic, chopped
4 teaspoons Raisins
6 Almonds, blanched
8 Dates, stoned
3 teaspoons Salt
Preparation:
Take the pumpkin, Scrape it and grate it. Cook in water with garlic, ginger, dates till tender and dry. Add vinegar, sugar, salt, Red chilli pepper , almonds & raisins. Cook till a little thick and slightly golden brown. Pour into bottles or airtight jars.
